The Zero-Proof Sour: Building a Whiskey Sour Without the Whiskey

 

Bartenders learn the sour before they learn anything else, because the sour is the curriculum: 2 parts strong, 1 part sour, 1 part sweet. Whiskey sour, daiquiri, margarita, gimlet — same skeleton, different coat. Master the ratio and you can build a hundred drinks.

Here's the part they teach second: the "strong" slot is just a slot. Fill it with something other than whiskey and the architecture holds perfectly — which makes the sour one of the most convertible formats in the zero-proof playbook.

 

 

What each part of a sour does

  • Strong (2 parts): body, warmth, and the base flavor — oak and caramel if it's whiskey
  • Sour (1 part): fresh lemon or lime; the drink's spine
  • Sweet (1 part): simple syrup or a flavored syrup; balance, not dessert
  • Optional foam: egg white or aquafaba, shaken hard, for that silky white cap

The whiskey contributes flavor and proof. The lemon and sugar contribute everything else people actually describe when they say they love a whiskey sour: bright, balanced, silky.

 

 

Building the zero-proof version

The strong slot: an NA whiskey alternative restores the oak-vanilla notes; a strong black tea concentrate with a drop of vanilla is the pantry hack (tannin reads as "spirit grip" on the palate). Fruit-forward sours skip the whiskey character entirely and let a bold juice carry the slot — which is exactly what our house summer sour does.

The foam: aquafaba (chickpea water) foams identically to egg white, keeps it vegan, and has no flavor. One ounce, dry-shake first (no ice), then shake with ice. The foam is technique, not alcohol — same lesson as our zero-proof espresso martini.

The lift: the sour's missing piece is the warmth whiskey left behind. A few droppers of SHAKE — roughly 1mg hemp-derived THC each, flavorless — restores a gentle, measured version of it, dispersed evenly through the shake.
